TEQUILA INFUSED FROZEN RASPBERRIES LAYERED IN MASCARPONE & CREAM CHEESE


A beautiful summer dessert. Can be made in no time. I always store berries in the freezer for this kind of desserts. Serve it with savoiardi lady fingers or butter fingers.



Serves 4
Time: 20 minutes


1 punnet (250grams) raspberries frozen
1 tub mascarpone cheese
4 tbs cream cheese
2 tbs tequila ( more if you want ;) )
3tbs caster sugar
4 savoiardi lady fingers or butter fingers
1 tbs icing sugar
1/2 tbs lemon juice


Method

First, pour the tequila on the frozen berries and mix it with caster sugar while crushing with the back of a fork and keep it in a freezer.

In the meantime, blend the mascarpone cheese with cream cheese lemon juice and 1 tbs caster sugar together until creamy in texture.

Spoon the frozen berries in the bottom of the glass then spoon the cheese mix. Layer it one more time in the same manner.

Garnish the top with fresh raspberries and dust icing sugar. Serve them with the savoiardi or butter fingers. 


TIP: You can use any type of berries or even mix the berries. It's a delicious dessert.
