BESAN (INDIAN CHICKPEA FLOUR FUDGE)

This is one sweet treat which every Indian household will have stored in. Its easy to make and finishes quickly. So you can have fresh batch every time. 






Makes about 800 grms
Time:20 to 30 minutes

250 gr chickpea flour/besan
250 gr sugar
200 gr ghee
2 tbs milk
Some nuts
1 tsp cardamom pods crushed


Method

First, mix chickpea flour milk and 2 tbs of ghee. Rub the mixture well. So no crumbs are formed then pass it through the sieve. 

Heat the remaining ghee and add the flour mix. Keep on stirring and cooking till the raw smell goes. This will take about 10 to 12 minutes on low heat . Remove and keep aside. 

In another pan add the sugar and 1/2 cup water and make 2 string syrup. When the syrup is done. Pour the flour mix in the syrup while mixing vigorously. Make sure  you are mixing it well.

At this stage add the cardamom and nuts and stir  for about  5 to 8 minutes.  

Pour the mix in well greased plate. Mark the lines to cut and let it cool. Cut and store in airtight container.

TIP: If in case it hardens, just break it and add about half cup of milk  and cook again and if soft, cook further for 5 minutes.
