POTATO AND BEAN SALAD


POTATO AND BEAN SALAD

Add quartered boiled eggs, grilled chicken pieces or roast beef slices to this salad and enjoy. When I have leftover boiled potatoes in the fridge, I love to make this salad. It's made quickly and finishes quickly.



Serves 4
Time: 15minutes



4 boiled potatoes, quartered
1 small onion chopped
1 tbs vinegar
1 garlic clove finely chopped
1 small bunch of green beans, snipped and blanched
2 tbs melted butter
Salt & pepper
1 tbs parsley chopped


Method

First, boil your potatoes and quarter them if not boiled. Otherwise, skip this step and do the next.

In a bowl, add the chopped onions, garlic, parsley, vinegar and salt and keep it aside till the onions change the colour. 

Add this onion mix and the green beans to the quartered potato mix. Pour in the melted butter and toss with the chopped parsley.

Adjust the seasoning and serve at once.
