BLACKBERRY JAM CAKE


BLACKBERRY JAM CAKE

Instead of blackberry jam, any other jam can be used as a filling. 




Makes 1 loaf pan size
Time:35 to 40 minutes



110 grm butter
1/4 cup caster sugar
2 eggs
1 cup self-raising flour
1 tsp baking powder
1/2 cup blackberry jam


Method

Put all the ingredients in a bowl and beat well for 2-3 minutes until the mixture is smooth.

Pour 1/2 batter into greased loaf pan, then spoon the blackberry jam on it and pour over the rest of the cake batter and smoothen the top. Tap the pan on the kitchen counter. 

Bake for 35 minutes or so till cake has risen and golden. Cool, the cake on a wire rack.

If you want, you can frost it with whipped cream and sprinkle some toasted almond flakes.
