CREAM AND CORIANDER CHICKEN


CREAM AND CORIANDER CHICKEN

Yes, it's made with cream but light meal.




Serves 4
Time: 15 to 20 minutes

6 chicken thighs boneless and skinless cut into 3 pieces
150 ml whipping cream
1 tbs olive oil
1 bunch chopped coriander
1/4 cup white wine or stock
Salt and pepper
1 white onion chopped finely
2 garlic cloves minced


Method

Heat the oil in a pan. Add the chicken and brown it. Remove and keep aside.

Cook the onions and garlic in the same pan. Make sure the onions do not change the colour but just soften. 

Then, add the wine or stock. Cook for few minutes scraping the pan. Add the half coriander first ( I add the stems first so I can get the maximum flavour). Pour in the cream and let it simmer for and then add the chicken and the remaining coriander. 

Adjust the seasoning and cook for 5 to 8 minutes.

Serve cream and coriander chicken on mashed potatoes, any kinds of pasta or rice.
