CHICKEN NUGGETS


CHICKEN NUGGETS
Very American chicken fast food snack. You cannot miss these at any fast food outlets. I like to make it at home fresh as I know what I am adding to my mix, unlike the others have preservatives. Simple recipe and can be cooked at any time. It's a hit in kids. They just love it, dunking in tomato ketchup and mustard sauce.




Serves 2
Time: 30 minutes


2  chicken breasts, cut into small pieces
1 cup plain flour
Salt & pepper
1/2 tsp paprika
1/2 tsp mixed herbs
1 small stock cube or a quarter of  a big cube crumbled
2 eggs
2 tbs water
2 cups breadcrumb
Oil, for frying


Method

First, make the dipping base, in one bowl, mix the flour, paprika, mixed herbs, salt and pepper. In another bowl beat the eggs and water. In a third bowl, add the breadcrumbs and the stock cube. I use stock cube to give a flavourful coating on the out side.

Dredge the chicken pieces in the flour, then dunking them in the egg mixture, then rolling them in the breadcrumbs until they're coated. Shake off the excess and place them on a plate.

In a pan over medium heat, heat oil. (You want it to be hot enough to sizzle gently when you add the chicken)

Drop in 8 to 10 pieces of chicken. Let them fry on the first side for a minute or so, then carefully turn them over to brown on the other side.

The chicken should cook until the breadcrumbs are deep golden brown, about 2 to 3 minutes total.

Remove the chicken to a paper towel-lined plate and repeat with the rest of the chicken until it's all fried. 

Serve warm with ketchup and mayonnaise or mustard and some potatoes fries on the side!
