Eggplants and Daikon in spicy garlic sauce served on sesame noodles.

Eggplants & Daikon in spicy garlic sauce served on sesame noodles



Serves 2
Time: 30-40 minutes



Eggplants and daikon
2 tbs cooking oil
3 small eggplants cut into long strips
2 daikon cut as eggplants
2 cloves garlic minced
1 red chilli minced 
1 tablespoon ginger minced
1 green onion chopped
1 tbs dark soy sauce
1 tbs rice wine vinegar
1tsp sugar

Sesame noodles
250 grams egg or non-egg noodles
2 tbs light soy sauce
2 garlic cloves minced
1 tbs rice wine vinegar
2 tbs sesame oil
2-3 tbs sliced spring onions
1 tsp toasted sesame seeds



Method


Heat the oil in a pan. Add the daikon and eggplants. Slightly brown them. Remove and set aside.

In the same pan add garlic, chillies (can add a bit more oil as eggplants drink a lot of oil), cook for few seconds till fragrant. 

Add the rest of the ingredients and toss in eggplants and daikon. Cook for 5 to 8 minutes.  

Serve with rice or noodles.

For the sesame noodles, Cook noodles as per instructions on the packet. I used non-egg noodles. 

In a bowl add soy sauce, minced garlic, rice wine vinegar, Sesame oil, green onions sliced and sugar. Mix it well. 

Toss the hot noodles with this mixture. 

Serve the eggplants and daikon on the hot noodles and sprinkle some toasted sesame  seeds.
