GRILLED CHICKEN BREAST WITH CAULIFLOWER & BROCCOLI BAKE

My family loves broccoli and cauliflower.  This cauliflower and broccoli bake is the easy recipe to make. I don't like to add too many ingredients to this dish because I don't want the fresh flavour of the vegetables to hide. Here, I served it with simply griddled chicken breast which was rubbed with olive oil, pepper and salt. You can also serve the bake with fish.




Serves 2
Time: 40 minutes


1 small head broccoli (florets steamed/boiled)
1 small head cauliflower (florets steamed/boiled)
2 tbs plain flour
2 tbs butter
Salt & pepper
2 tbs parmesan cheese
2 cups milk
2 chicken breasts rubbed with salt and pepper and olive oil


Method


Heat the butter in a pot. Add the flour and cook for 1 to 2 minute till it starts turning pink on the edges. 

Whisk in the milk. Bring to a rolling boil and add the parmesan cheese. Give it a stir and let it boil for few more minutes. Adjust the seasoning.

Pour this white sauce on the steamed/boiled broccoli and cauliflower ramekins and top it with some breadcrumbs and bake in preheated oven at 200'C for 20 minutes till the top is slightly golden and the sauce is bubbling. 

Remove it and let it rest. In the meanwhile, cook the chicken breasts on the griddle pan till cooked through and serve it with the cauliflower and broccoli bake.

This bake can be made in individual ramekins or in one big baking dish.
