HONEY & LEMON GLAZED CHICKEN WITH POTATOES

Pack in the flavour with this easy recipe for chicken. You can always prepare the chicken few hours ahead if you like and leave in the fridge to marinate longer for extra flavour.  You can serve with rice or egg noodles.


                       


Serve 4
Time: 40 minutes


4 skinless chicken breast
4 tbs honey
zest and juice of 1 lemon
2 cloves garlic minced
1 tbs dijon mustard
2 tsp fresh black pepper
4 big potatoes quartered
Few chilli flakes (optional)


Method

Give two to three incisions on the chicken breast.

In a dish, mix the honey, lemon zest and juice, garlic, mustard and black pepper. Add the chicken and turn to coat well. Set aside for 10 minutes.

Arrange the potatoes on a baking tray in a single layer. Roast them in preheated oven at 200'C for about 20 minutes. When potatoes have been in the oven for first 10 minutes, tip in the chicken breasts with the marinade in another pan, so that the both comes out in 20 to 25 minutes.

Serve the chicken and potatoes on a plate with some greens on the side, I served steamed broccoli and the juices from the chicken pan.
