SIMPLE PORK TENDERLOIN SERVED WITH IT'S JUICES 

This is a very simple dinner recipe. It hardly takes 30 minutes. Rub any spice of your choice on tenderloin, brown it and finish the rest of the cooking in the oven. Serve it with mashed potatoes with juices and some parsley chopped. Instead of pork, lamb or beef can be used.






Serves 2
Times: 30 minutes


2 x 250 grms pork tenderloins
Spice rub ( black pepper, salt, red chilli flakes)
1 tbs oil
1 tbs butter
1 cup stock/water
1/2 tbs plain flour
Salt & pepper



Method




Dry pork tenderloins with the paper towel.  Then, roll in the spice rub.

Heat a tablespoon of oil in a cast iron pan or heavy-bottomed pan. 

Add the pork tenderloins and cook, turning occasionally, until evenly browned all over. This should take about 2 minutes per side.

Roast the meat for 10 to 15 minutes in preheated oven at 200'C. ( You can roast it longer if you want it well done)

Transfer pork to a serving plate and cover with a foil. Let it rest for about 10 minutes. While you make the mashed potatoes with pre-boiled potatoes

While pork is resting, heat the pan and add the butter and plain flour, cook for a minute or two and pour the stock or water and whisk it well.  When thickened slightly, serve drizzled with pork and bit of fresh chopped parsley.


TIP: Never use wines or any kinds of vinegar on a cast iron pans. It spoils the taste of the food you will cook.
