CHICKEN AND EGGPLANT PARMIGIANA WITH LEMON GARLIC ORZO

Very filling and hearty meal. Kids would enjoy because of the cheese. If you want it slightly spicy, chilli flakes can be added. This meal can be served with a crisp salad also if one doesn't want orzo.



Serves 2
Time: 35-45 Minutes


2 chicken breasts
1 eggplant sliced in 4 rings
1/4 cup parmesan cheese grated
1/2 cup cheddar cheese grated
1 cup marinara sauce
1 cup orzo 
2 garlic cloves
1 tsp lemon zest
1/2 tbs lemon juice
Handful of basil leave


Method

Heat a pan and brown the seasoned chicken breasts and eggplant slices for 2 - 3 minutes on both the sides. 

                                           

Remove the chicken and eggplants from the pan. Now take the marinara sauce, spoon some on the bottom of the baking dish. Then place the chicken breasts. Spoon little more on the chicken, then some cheese. Arrange 2 eggplant slices each and then some more sauce, cheeses and basil leaves. Bake it in the preheated oven at 200'C till golden and the cheese is melted.





Serve this dish with orzo or with any kind of pasta. You can also serve it with a green salad.


TIP: To make the orzo, boil the orzo in water just the way you would cook pasta. Strain the water. Add the lemon juice and a tablespoon of butter to it. Season and serve it as you like it.
