TURMERIC AND GARLIC SPICED TILAPIA WITH CUMIN ROAST POTATOES

Very good recipe, and very tasty. The tilapia is a soft fish, so it's baked or cooked just long enough to its doneness. This is my version of fish and chips with an Indian twist.





Serves 1
Time: 30-40 minutes


1 fillet tilapia 
2 medium potatoes 
1/2 tsp cumin
Salt & pepper
2 tbs olive oil
1/2 tsp turmeric
1 tsp garlic minced
1 tbs lemon juice




Method

First, marinade the fish by mixing turmeric, oil, salt, pepper and lemon juice. Leave it aside in the fridge for about 10 minutes.


As the fish is marinating, prepare the potatoes to roast. Cut them in halves and slice them. Toss them in oil, cumin, salt and pepper. Roast them in the preheated oven at 200C for 15 to 20 minutes.

Tip the fish in the oven to cook for about 7 to 8  minutes. Make sure it's not overcooked as tilapia is a delicate fish.



Serve the tilapia with oven roasted potatoes with crisp apple and beetroot salad.
