CHERRY TOMATOES AND GARLIC BAKED CHICKEN WITH LEMON BUTTER SPAGHETTI

 Homegrown cherry tomatoes are the best. They are juicy and packed with natural organic flavor. You can use these in salads, soups in pasta sauces, I mean however you like. Tonight I used them in my chicken with the garlic cloves. It was really simple. Just a couple of bruised garlic cloves with skin on, cherry tomatoes, olive oil, white wine, butter, seasoning, and parsley. That's it and in the oven. Served it with the hot lemon butter spaghetti. Voila! Everybody enjoyed it. 




Serves 2
Time: 35 minutes

2 chicken leg quarters
2 handful cherry tomatoes halved
8-10 bruised garlic cloves with the skin one ( you can add more)
Salt & pepper
1/2 cup white wine
1 tbs chopped parsley
2 cups cooked spaghetti with some liquid reserved
1 tsp lemon zest
1 tbs lemon juice
2 tbs butter
1 tbs olive oil


Method

First, place the chicken quarters in a baking dish. Season it very well. Scatter the cherry tomatoes, garlic cloves, pour the white wine, drizzle the olive oil and 1 tbs butter. Garnish with parsley and bake in preheated oven at 200'C for about 20 minutes till cooked throiugh. If in case its charred before getting cooked through, cover with foil paper.


                            


Now for the spaghetti, mix all the ingredients with 1 tbs of butter and heat it through till all mixed well.




Serve the chicken quarter, garlic and cherry tomatoes on the spaghetti and drizzle the juice on top and some more chopped parsley.
