A Middle eastern sauce which is used as pesto to flavour or on the side with the dishes. It is originally from Yemeni cuisine. Zhaug is favourite condiment served along the meat, fish, chicken.
Makes 2 cups
Time: 15 minutes
2 cups chopped coriander ( 1 cup coriander/1/2 cup parsley/1/2 cup mint )
2-3 jalapenos or very hot green chillies
2-3 cloves garlic
1 tsp cumin powder
1 tsp cardamom powder
1 tsp sugar
A small pinch of cloves
salt
1/4 cup olive oil
3 tbs fresh lime juice
Method
Pulse all the ingredients except the oil and lemon juice in a food processor until the herbs are minced.
With the machine running, pour the olive oil and lime juice. Season to taste.
Store in the refrigerator for up to 1 week.
