RICE AND CHEESE BALLS

Tea time snack made with the leftover rice. Made this for my son after school. He enjoyed it very much his tea. You can do many variations, I added cheddar cheese and spring onions, but cumin, onions, ginger, garlic or chillies can be added too. They taste good either hot or cold. 



Serves 4-6
Time: 30-35 minutes


2-3 cups cooked rice or even over cooked rice
2-3 spring onions thinly sliced
1 garlic clove minced
1-2 tbs chopped fresh coriander
1/2 cup grated cheese
2-3 tbs plain flour
salt and pepper
Splash of warm water


Method


Mash the rice with little warm water to soften the rice. To this add all the ingredients and knead well.



Make round balls and refrigerate for few minutes. Heat the oil and fry till golden and crisp. 


Serve these balls with tomato ketchup and tea.
