SUN DRIED TOMATO SAUSAGES WITH BUTTERY LEEKS AND CHICKPEA MASH

Simple dinner meal, sun dried tomatoes sausages with chickpea and leeks mash on the table in no time. If you do not want to use the chickpeas, butter beans or red kidney beans ca be also used.




Serves 2
Time: 30 minutes


4 sun dried tomato sausages
1 small onion finely chopped
1 can chickpeas/butterbeans
1/2 cup chicken/vegetable stock
1 tsp thyme
1 tbs olive oil
1/2 cup sliced leeks
Salt and pepper
2 tbs butter
1 tbs chopped parsley


Method


Heat 1/2 tbs of oil and saute the leeks till slightly charred and softened. Then add the chickpeas. Cook for a minute or two. Mash them. Then add the stock, butter and seasoning. Keep it warm. 



As the mash is being prepared, fry the sausages. Boil the sausages in a little water so it is cooked through then discard the water and fry in few seconds in 1/2 tbs of oil to get the brown colour.

Serve two sausages and mash on a plate garnished with chopped parsley.
