GINGER AND YOGHURT MARINATED CHICKEN

One of the simple throw in ingredient recipe. All you need is ginger, yoghurt and a few spices. Throw in some sliced potatoes to make it a kind of one meal. I like to cook something like this on the weekends when my family members are home and we can do things together. It's actually a fun time. Its great recipe to cook when you have friends over too.





Serves 4
Time: 1 hour (including marination time)



1 whole chicken cut into pieces or 4 chicken quarters
2 cups yoghurt
1/4 cup grated ginger
2 tbs green chillies ( adjust according to the taste)
Salt and pepper
1-2 tsp Kashmiri chilli powder
1 tsp turmeric
2 tbs lemon juice
1/4 cup chopped coriander
2 tbs coriander powder
2 -3 tbs oil/ghee



Method


Make tiny incisions on the chicken and marinate in the lemon juice and salt for 5-8 minutes.

Meanwhile, mix the remaining ingredients for the marination. Rub the chicken well with the marinade and leave it for 20 minutes or overnight in the refrigerator. 

Heat the oven to 200' C or prepare the charcoal grill and cook it while brushing with little ghee or oil. This gives a nice taste to the chicken.  Cook till the juices run clear and serve with naan or the potatoes.

TIP: I don't throw the marinade. I put in some half boiled potatoes and cook them till they are all soaked in the yoghurt mixture and crisped on the edges. 

Serve with sliced onion rings, naans and limes on the side.
