A really tasty and easy recipe to make chicken tikka and get the taste of the restaurant. The marinade is one bowl recipe. All you have to mix the ingredients in a bowl and massage the sliced chicken pieces with it. They taste best when cooked on the charcoals, but if you cannot an oven or an air fryer are fine too.
Serves 4-6
Time 2 hours (plus marination) or overnight
4 chicken leg quarters or 6 chicken breasts
3 tbs yoghurt
2 tbs coriander powder
5 cloves garlic
1 big piece of ginger chopped
1 -2 tsp paprika or red Kashmiri chilli powder
1 tsp cayenne pepper
Few green chillies
Salt and pepper
1 tsp garam masala
2 tbs cream
2-3 tbs melted ghee for basting/brushing
Method
Tip all the ingredients except the chicken in a blender and pulse it so it's roughly pureed.
Then prick the chicken pieces with knife or fork and massage the pieces with the marinade. Cover the chicken and refrigerate for at least one hour or can keep it overnight.
Heat the charcoals and cook the chicken on it while brushing with the melted ghee. Ghee gives a rich taste and caramelises the meat.
If using an oven, preheat the oven to 200'C and roast in for 35-40 minutes.
If using an air fryer, follow its instructions.
Serve with green chutney and coleslaw ( my son loves it and it works well when one cant handle the spice)
