LEEK AND POTATO SOUP
Super easy soup to make. It tastes good. Perfect to have it on a chilly night. The consistency of the soup can be adjusted according to one's preference. I like it thick so I can dunk in my toasted bread sticks. Bacon lovers like my son and husband can garnish with crispy bacon.
Serves 4
Time: 25-30 minutes
1 cup water
1 small leek sliced very thinly for garnishing
Add stock and 1 cup of water. Season with salt and pepper. Cover. Bring to the boil. Reduce heat to low. Simmer for 20 minutes or until potatoes are tender.
Using a hand blender, blitz the soup until smooth. Return to low heat and stir in the cream.
Meanwhile, heat little oil in a pan, fry the sliced leeks for garnishing. When crispy remove it on a kitchen paper.
Method
Melt the butter in a pan on a medium heat. Add leek. Cook for 10 minutes or until leek is softened.
Add garlic and potatoes and cook for 5 minutes.
Add stock and 1 cup of water. Season with salt and pepper. Cover. Bring to the boil. Reduce heat to low. Simmer for 20 minutes or until potatoes are tender.
Using a hand blender, blitz the soup until smooth. Return to low heat and stir in the cream.

Serve it warm with toasted buttered or plain toasts.
