AUBERGINE PATE / BABA GANOUSH

Aubergine pate/dip or baba ganoush, it's quite nice to serve with breadsticks or some crackers or even toasted pita bread. My son doesn't like aubergine at all, but he loves this dip. A way of putting a healthy vegetable on children's plate.



Serves 4
Time: 5 minutes + 20 minutes roasting 


4 medium aubergines 
1 small onion chopped
 2 cloves garlic chopped
1 tbs chopped coriander
1/2 cup yoghurt
1 tbs lemon juice
1 tbs tahini paste (optional)

Method

Put all the ingredients in the blender and blend it till soft and creamy. Adjust the seasoning. Tahini can be used if you have it otherwise it's fine.

Tip it into a bowl. Make a well in the center and pour in good extra virgin olive oil and a balsamic vinegar.

                                 

Serve it with toasted pita bread or breadsticks ( use the pizza dough for the breadsticks) In Order to make the sticks, just roll the dough into sticks as in the picture below and bake in 200'C over for 8-10 minutes till browned. When done brush it with melted butter.
