Serves 2
Time: 20-30 minutes
2 cod fillets
4 layers pancetta
1 tbs chopped parsley
2 large tomatoes
Salt & pepper
1 tbs olive oil
1/2 tbs butter
Method
Season the cod fillets well and wrap them in the pancetta.
Heat the oil and butter in an oven proof pan. Arrange the wrapped fish in the pan with the halved tomatoes. Sprinkle some black pepper.
Cook each side for 2 minutes, until crisp and finish the rest of the cooking in the preheated oven at 200'C for 8 to 10 minutes.
Serve it with Steamed potatoes on the side.
