DAUPHINOISE POTATOES


Dauphinoise potatoes, a French potato baked dish with milk, cream, garlic and thyme. Normally, it takes about 45 to 50 minutes to bake but my recipe takes about 20-30 minutes. It is very rich potato dish which can be served with various meat, chicken or duck dishes. 



Serves 4 
Time: 20-30 minutes

3 medium Maris piper potatoes
500 ml milk
100 ml cream
Salt & pepper
A few thyme sprigs
2 cloves garlic smashed
1 tbs butter


Method

Scrub the potatoes, and using a mandolin, slice the potatoes very thinly. Tip these sliced potatoes in the hot boiling water and cook till the first boil. 


Dish out the potato slices in the baking dish. Season it. In another pot, boil the cream, milk, garlic and thyme. Bring it to a simmer.




Sprinkle the thyme sprigs on the potatoes and dot with butter. 



Bake it in a preheated oven at 200'C for 20 - 30 minutes until golden brown on the top. 

TIP: I cut the baking time by cooking in the milk mixture. Cooking doesn't take time as potatoes are very thinly sliced. But if you want to omit this process then, jut arrange the potato slices in the dish and pour the heated cream and milk mix and bake for 45-50 minutes till cooked through.

I served this as a side dish to Beef wellington
