SPICY BOEREWORS MEAT ON PUFF PASTRY WITH DRESSED LETTUCE 

I like doing easy meals on Sunday nights. Something lighter. So, I made this puff pastry with boerewors meat and some onions and peppers and a bit green chilli for an extra kick. This can also be served as a breakfast, just crack an egg on the top. How about as appetisers in small sizes?
 I served with dressed lettuce ( had a good produce of lettuce this time). You can also use roast vegetables with paneer/halloumi/crumbled cheese on the puff pastry.




Serves 2
Time: 35 minutes



For the puff pastry
2 puff pastry sheets (4'' by 4'')
1 cup boerewors meat from the casing
1-2 green chilli chopped
1/2 onion chopped finely
1 garlic clove minced
1/2 tbs chopped parsley 
A few pinches of grated parmesan cheese
Salt & pepper
1/4 cup water
2 tbs red pepper diced finely
1 egg with 2 tsp water beaten for egg wash 

For the lettuce
2 cups shredded lettuce
1 tbs olive oil
1/2 tbs lemon juice
1 tsp dijon mustard
1/2 tsp icing sugar



Method

For the puff pastry, thaw it first. Then take both the puff pastries, score a box inside leaving half inch gap on the edges. Brush the whole puff pastry with the egg wash and lightly make slit marks on the edges and keep it aside.


Now heat a pan and cook the onions with green chillies and garlic for a minute. Add the meat and cook further for 2 to 3 minutes till browned. Add the water and stir. Cook till the water is evaporated. Season with pepper and salt (make sure you taste as you add the salt because boerewors have enough salt). Remove from the heat and cool completely.

Arrange the meat mixture in the centre of the puff pastry and sprinkle the red peppers on the top. 

Bake in the preheated oven at 200'C for 20 minutes, till edges turn golden brown.

In the meantime, mix the olive oil, lemon juice, mustard and icing sugar in a bowl. Whisk it and add the shredded lettuce in it. Toss it well.

Serve the warm spicy boerewors puff pastry with the dressed lettuce.
