CHOCOLATE KAHLUA CAKE WITH CHOCOLATE MOUSSE

Chocolate cake recipe is easy to follow and the ingredients are staples in most kitchens. The result is rich, moist, and absolutely delicious. Everybody will be licking their lips and picking up the last crumbs from their plates after trying a slice of this chocolate cake. That's the reason I made this cake for my husband's birthday. 




Serves 6-8
Time: 35 minutes


For the cake
1 cup plain flour
1/2 cup sugar
1/2 cup bitter cocoa powder (unsweetened)
1 tsp baking powder
1/2  tsp salt
1 egg
1/2 cup milk
1/4 cup oil
2 tsp vanilla
1/2 cup boiling water

For the mousse
2 cups whipping cream
1/2 cup ganache ( melt 1/4 cup milk chocolate chips + 1/4 double cream)

For the decoration
A few Cadbury flakes crumbled



Method

For the cake, first, preheat the oven at 180'C. Line and grease the 8-inch spring form baking tin and keep it aside. 

Add plain flour, baking powder, cocoa powder, salt in a bowl.


In another bowl, add the milk, egg, oil, vanilla and sugar.


Whisk both dry and wet mix well.


Mix the dry mix in the wet mix. Whisk thoroughly till smooth.


While whisking the cake batter pour in the boiling water. 


Whisk. At this point, the batter looks very runny, but that's fine.


Pour the batter into the greased tin. Tap it slightly for the bubbles to escape. Bake in preheated oven at 180'C for 35 minutes or so till the toothpick inserted comes out clean.


Remove from the oven and let it cool slightly. 


Boil 1/4 cup water with 2 tbs sugar, till sugar dissolves. Then add the Kahlua or vanilla to it. Cool it and brush/spoon it on the cake so that the syrup penetrates the cakes well.


For the mousse, whip the whipping cream well till the peaks form. Then fold in the ganache. Then, mix in the gelatine. When the cake is cooled then spoon in the mousse. Tap the tin and garnish with flaked Cadbury. Refrigerate for at least 4 hours or overnight. To remove from the tin, Just swirl hot butter knife around the cake tin and remove the rim.





TIP: If you are making this cake for kids or do not drink alcohol, just add the vanilla sugar syrup. I bet you will love this cake.

To make the ganache, heat 1 cup double cream then add 1 cup milk chocolate chips. Remove from the heat and stir. Let it cool completely. Then refrigerate.
