APPLE MUFFINS ( WHEAT FLOUR )

A really easy muffin recipe with speculaas flavours of dutch shortcrust spiced cookies which are made with cinnamon, nutmeg, cloves, ginger, cardamom and white pepper. It is made during the St, Nicholas day in Netherland and Belgium. In Germany, it's made during Christmas time. The warm spices mixed with apple muffin batter really comes out well. It tastes wonderful with a hot cup of tea/coffee in the morning. 



        

Makes 12
Time: 25 minutes


For the wet ingredients
1 cup milk + 2 tsp vinegar
1/3 cup brown sugar
1 egg
1 tsp vanilla
1/3 cup oil

For the dry ingredients
1 1/2 to 2 cups apples chopped  finely ( about 2 apples)
1 1/2 cup wheat flour
1 cup plain flour
1 tsp baking soda
1 tsp baking powder
A pinch of salt
2 tsp speculaas spice
1/2 cup golden raisins

For the crunchy topping
2 tablespoons butter
3 tablespoons white sugar
½ tsp speculaas spice

For speculaas spice
4 tsp cinnamon
1 tsp cloves
1 tsp nutmeg
1/4 tsp white pepper
1/2 tsp ginger
1/4 tsp cardamom
1/4 tsp white pepper

Method

Prepare the wet ingredients in a bowl. Beat the eggs, milk+vinegar, sugar, egg, oil and vanilla.



In another bowl, prepare the dry ingredients by sieving them together. Mix the wet into the dry and form a batter. This batter will not appear like the normal muffin or cupcake batter. It will be slightly thick.


Bring the batter together and fold in the raisins and chopped apple. 



Spoon the batter into the prepared muffin linings in the baking tray with an ice cream scoop. This way you get exact amount in the holes.



In a small bowl mix the sugar, butter and the speculaas and divide this mix on all the12 muffins.



Bake the muffins for 25 minutes in a preheated oven at 180'C. They should look browned and soft and the sugar crunch should be caramelised.
