Pancakes are all time favourite with adults or children. My son loves pancakes for breakfast. I made these the other day and they were soft and fluffy. It had a cake like texture. Serve them with maple syrup, golden syrup, butter and jam, I mean whatever you may like. Do give it a try.
Makes 8 Pancakes
Time: 35 - 40 minutes
1 1/2-2 cups milk
2 eggs
2 tbs melted butter
2 cups plain flour
1 tsp vanilla
1 tbs sugar
1 pinch salt
2 tsp vinegar
Method
Mix all the ingredients in the jug or a big bowl and blend it with a hand blender. Always start with wet ingredients first then the dry ones. Because wen you blend it doesn't leave anything at the bottom.
Heat a heavy pan on a medium heat and pour a quarter cup of batter and let it spread.
Once spread, bubbles will appear. This is will take about a minute or two. Do not flip if the bubbles are not formed.
After flipping the pancake, you will see a nice light brown colour. Let it cook for another minute or two and puff up. Remove and keep it warm till all done.
Serve 2 to 3 hot/warm pancakes swirled with syrups, a dollop of butter and some jam. I like my black cherry jam. Kids will surely enjoy this. Whipped cream on the side won't be bad.
