ITALIAN SAUSAGES WITH PEPPERS AND ONIONS

This recipe is so easy to prepare. All you need are good quality sausages, colourful peppers, onions and a bit red wine. Serve it with brown rice if you want to opt for healthy meal or simply with mashed potatoes or bread rolls. 



Serves 4
Time: 35 minutes



1 packet of good quality Italian sausages (pork/beef)
1/2 red bell pepper sliced
1/2 green bell pepper sliced
1 big onion sliced
A pinch of red chilli flakes
1 tsp mixed or Italian herbs
1/2 cup red wine
3-4 garlic cloves minced
2 cups cooked brown rice + 1 tbs melted butter
1 tbs olive oil
Salt and pepper




Method

Cook the sausages in a little oil to brown on the sides. ( do not cook it all the way through). Remove and keep them aside. In the same pan, add the onions and peppers and saute them till charred on the sides. Add the garlic and cook for a minute or two.


Now, add the wine and the sausages to the pan. Season it and cover to cook till the sausages are cooked through and much of the wine has evaporated.



Serve the sausages with peppers and onions on the bed of hot brown rice mixed with butter. Garnish with chopped parsley.
