GRILLED GREEK SPATCHCOCK CHICKEN

Citrusy, peppery grilled chicken with Greek flavors. It is an easy meal. All the ingredients would be in the kitchen. You can make this amazing grilled chicken in an oven, slow cooker or on the charcoals. I served it with the greek pasta salad. Gyro bread can be used as a side. 




Serves 4
Time: 35-45 minutes


2 tbs dry oregano
1 tbs lemon zest
2-3 tbs lemon juice
1/4 cup olive oil
Salt and pepper
2-3 minced garlic cloves or 1 tbs garlic powder
1 whole chicken spatchcocked or 4 joints



Method

Mix all the ingredients for the marinade. Rub it on the chicken and push into the cuts. Keep it covered for 10 minutes till marinated. This can be done a day ahead too. 





Drizzle a little oil on the baking dish and place the chicken on it, skin/breast side up. Pour the leftover marinade over the chicken. Grill the chicken in a preheated oven at 200'C for 25-30 minutes till the liquids run clear and the skin has crisped.


Remove from the oven and let it rest for 5 minutes and serve with the Greek pasta salad and gyro/pita bread on the side.
