GARLIC SAUCE (LEBANESE)


This is my favourite garlic sauce. It doesn't even take time to make it. You just need is garlic and oil as the main ingredients to prepare it. it is well stored in the refrigerator for up to 2 weeks. This sauce can be used as a base for many sauces. It can be used on garlic bread with butter. You can use a hand blender to make the sauce to go step by step of emulsifying it but I just throw all the ingredients into a Nutri bullet jar and that's it. Blitz it for 40 seconds or so and it's all ready.




Makes: 1 cup 
Time: 40 seconds to 2 minutes


1 cup garlic cloves
1 cup oil
1 tbs good quality olive oil
1 egg white (optional)
salt
1-2 tbs lemon juice


Method

If using the Nutri bullet, add all the ingredients into the jar and blitz for 40 seconds till all the stuff comes together. 

If using the hand blender or a food processor, add the garlic, salt, lemon juice. egg white (if using ) and olive oil first and blend it. Then add the oil slowly into the mixture while the blender or the processor is still on. At this stage, it will start emulsifying just the way the mayonnaise is made. 

When the sauce comes together in a white form. You are done. Spoon it out into a bottle and store in fridge up to 2 weeks.




TIP: To make the sauces with the garlic sauce base.

  1. Garlic mayo: 1-2 tbs garlic sauce + 1 cup mayo.
  2. Parsley & coriander sauce: 1 cup chopped parsely + corinader + lemon juice + 1-2 tbs garlic sauce.
  3. Garlic butter: 1 tbs garlic sauce _1/2 cup soft butter.
