WARM COCONUT AND PINEAPPLE CAKE
Serves:6 to 8
Time: 25 to 35 minutes
250 grams desiccated/fresh grated coconut
150 ml milk
150 ml milk
1/4 cup butter
1 cup caster sugar
1 egg
1/2 cup plain flour
200 grams pineapple, diced
a few flaked almonds to garnish
Method
- Preheat the oven 180'C and grease 20 cm cake tin.
- Heat the milk in a pan and melt the butter in it. Mix the coconut with sugar in milk mixture.
- Beat in the egg and combine the plain flour. Add the pineapple dices to the batter.
- Pour the batter into the greased tin. top it with the flaked almonds. Bake for 30 to 35 minutes till golden crust formed.
This cake can be served warm with a scoop of vanilla ice cream or whipped cream. For extra garnish, you can also add cherries .
