SAUSAGES, POTATOES AND KALE SOUP
Serves 4
Time : 35 to 40 Minutes
1 tbs olive oil
1 tbs butter
1 onion (white/red) thinly sliced
2 garlic cloves minced( can add more if like)
1 packet of sausages, about 4 to 5 ( chicken/pork/beef) your choice. Cut in bite size slices
2 medium potatoes sliced 1/4 inch
3 to 4 cups stock
1 big tomato chopped
1/4 to 1/2 cup milk
3 cups stemmed and roughly chopped kale leaves or sukumawiki or spinach
Method
- Heat the oil and butter. Add the sausages, onions and the garlic. Saute them till sausages are browned on the edges.
- Pour the stock in and add the potato slices with tomatoes. Season it with salt, chilli flakes and fresh black pepper. Cover ad simmer until the potatoes are tender.
- Now add the kale leaves ( or any green leaves of your choice) with milk. Cook it down. It may appear curdled, but don't worry. It's perfectly fine. In case the soup consistency is not thick you can further simmer it.
Serve this soup with a fresh dinner roll or just on its own. One can also squeeze some lemon juice and add a dash of tobasco to it. ( I like mine this way)
