TABBOULEH SALAD





TABBOULEH SALAD







Serves 4
Time: 20 minutes


1/4 cup bulgur wheat
1 cup chopped fresh parsley
1/4 cup chopped mint
1 medium cucumber finely chopped
2 spring onions finely chopped
2 firm tomatoes (pulp separated)
Juice of 1/2 lemon
salt & pepper
Olive oil to drizzle


Method

  • First soak the bulghur wheat in a bowl with hot water, enough to cover 1/2 inch up. It shouldn't take more than 15 to 20 minutes, meanwhile , start prepping the other stuff.
  • Bring rest of the ingredients in a bowl. pour in the lemon juice and a bit of tomato pulp  and set aside.
  • Once the bulgur has softened, mix it in the parsley bowl. Toss the salad. Add the olive oil. Salt and pepper can be added just before serving.

Its a refreshing salad for those hot days or just to serve as a side for a BBQs, grilled chicken or lamb.
