ALOO (POTATO) PARATHA
Serves 4
Time : 35-40 minutes
For the potatoes
4 medium potatoes boiled
1 small onion chopped
1 tsp very finely chopped ginger
1/2 tsp amchur ( dry mango powder)
1 tbs chopped coriander
salt & pepper
For the dough
2 - 3 cups wheat flour
salt
enough warm water to knead the dough
Method
Mix and mash all the potato ingredients together and keep aside. Divide the mixture into 4 balls .
Knead a dough with the dough ingredients.
Make 8 medium balls ( 2 balls to roll into chapatis for 1 parantha) and roll into 8 small chapatis of 4'' in diameter.
Place the potato ball on one chapati and lightly press on it leaving some space at the edges. Cover the potato chapati with the second one and cringe around as shown in the picture and roll about 2'' more.
Cook the parathas on medium heat basting with ghee or oil. Serve with pickles, yoghurt or butter
