SWEET AND SOUR SAUCE
This is not an authentic Chinese sweet and sour sauce. This sauce is more adaptable to western taste. ketchup is used as the sweetening and red colour agent. The original Chinese sauce is made with vinegar and some sort of sweet agent. The recipe I follow doesn't have pineapple as a sweetener and it's better than the bottled sauces. If you like pineapple, I have mentioned the proportions to adjust with this recipe.
Serves: 1 1/2 - 2 cups
Time 10 minutes
1/2 cup sugar
1/4 cup Chinese rice vinegar
2 tbs light soy sauce
2-3 tbs tomato ketchup
1 tbs cornflour mixed in 2 tbs water
1 cup water
Sweet and sour sauce with pineapple
1/4 cup sugar
1/4 cup pineapple syrup/juice ( with few chunks if you like)
2 tbs light soy sauce
2 tbs tomato ketchup
1 tbs cornflour mixed in 2 tbs water
1 cup water
Method
Mix everything in a pot and bring to a boil. Once it has thickened according to the consistency you like, remove from the heat. A bit of siracha sauce can also be added if one wants it hot.
Serve on crispy fried pork, chicken, prawns or as a dipping sauce for spring rolls, egg rolls etc.
