CHICKEN KEBABS
You can never go wrong with kebabs as a meal for any time of the day. Here, I made chicken kebabs for dinner. I would suggest using thigh meat for marinating but breast meat is equally fine too. All the ingredients used in marinating are common to the kitchen. You can either grill, Bbq or cook on gas top. Serve these with a nice fresh salad or roast potatoes or saffron rice as the side dishes along with green chutney sauce and cream cheese and yoghurt dip.
Serves 4 to 6
Time; 30-40 minutes ( marinating and cooking)
Chicken kebabs
500-700 grms chicken thighs/breast cut in bite size
4 tbs vinegar
1 tsp ginger paste
1 tsp garlic paste
1/2 cup yoghurt
1 tsp cumin powder
2 tsp red chilli powder
2 tbs oil
skewers
Cream cheese and yoghurt dip
1/2 cup cream cheese at room temperature
1 cup yoghurt
2 spring onions finely chopped
1 garlic clove grated
Salt and pepper
!/2 tsp lemon/lime juice
Method
Wash and dry the chicken pieces. Mix the above ingredients for marinating the chicken in a bowl. Let it sit for 3o minutes.
Insert the skewers into the chicken pieces.
Heat the oil in a pan and grill the chicken for 10 minutes until the chicken is cooked and charred slightly. You can also cook on the charcoals or in the oven.
Serve it with the salad or potatoes or rice and green chutney sauce or cream cheese yoghurt dip.
For the cream cheese yoghurt dip, mix all the ingredients and adjust the seasonings.
