BANANA AND CHOCOLATE CHIP MUFFINS

This is a great recipe, easy and yummy. A perfect way to finish off the overripe bananas. My son doesn't like bananas at all but doesn't mind bananas in these muffins. And, we all know bananas and chocolate can never go wrong. Bake these muffins and enjoy your Sunday family mornings.




Makes 12
Time: 15 to 20 minutes


2 1/2 cups plain flour
1 cup chocolate chips
4 tbs baking powder
1/4 cup oil
3 mashed bananas
1/2 cup sugar
2 eggs
1 tsp vanilla 


Method


First, mix the flour, chocolate chips and baking powder light handily.

Then, in an another bowl, mix the oil, eggs, sugar, bananas and vanilla well. 

Mix in the flour mixture in the banana oil mixture and fold well. 

Scoop the batter into the lined muffins trays with paper cups and bake in preheated oven at 180'C for 15 to 20 minutes till risen.

Cool on the wire rack.

TIP; Instead of mashed bananas, applesauce or grated apples can be used also.
