HERBED CHICKEN WITH GARLIC AND LEMON

A nice chicken recipe which can be eaten indoors or outdoors with family. The recipe is very simple and few ingredients are used.  Chicken can be marinated a day before and cooked the following day. 





Serves 4
Time:30 - 40 minutes 


1 handful
 of mixed herbs ( rosemary, thyme and parsley)
or 
2 tbs dry mixed herbs
2 cloves garlic
4 tbs olive oil
Zest of lemon and it's juice
8 chicken thighs (boneless + skinless)

Method

Blitz the herbs, garlic, oil and lemon zest and seasoning with a hand blender until it forms a paste, it's ok if it's not completely smooth. Marinate the chicken and put in the fridge for at least 30 minutes or overnight.

For baking in the oven, place the thighs on the roasting tray and cook for 30 minutes in a preheated oven at 200'C until cooked through. and then pour over the lemon juice.

Serve with roasted baby potatoes or potato and bean salad.

TIP: If cooking on coals, leave the skin on and cook skin side first till browned then turn, cook further for about 8 to 10 minutes. Remove from the heat and pour over the lemon juice.
