A sauce made with the chickpeas, tahini, garlic and olive oil. It is one of the main side dishes served in any Middle eastern cuisine.
Makes 2 cups
Time: 10 minutes
2 cans chickpeas
2-3 garlic cloves
1/4 cup pure olive oil
Salt and pepper
A bit of water (optional)
2 tbs lemon juice
1/2 tsp paprika
1/2 tsp paprika
1/2 tsp grounded cumin
Method
Add the above ingredients in the food processor and process it well blended. Adjust the seasoning and then pour in the olive oil while the food processor is running so that the oil is incorporated into the chickpeas.
Remove into a container. Make a well in the centre and add in olive oil and garnish with paprika and cumin powder. It can stay in the fridge for up to a week. ( every time you scoop the hummus out, just add fresh olive oil to it to keep it fresh )
