RICE PARATHA ( RICE FRIED BREAD)

This paratha is made with the leftover rice I had cooked the previous night. Here I have used lemon rice but the plain rice will do too. All you have to add to the rice is the wheat flour and some spices with fresh herbs and knead into a dough and roll and fry. This is the best way to finish the leftover foods in the house. I also use leftover dal to make parathas by adding the same ingredients. Serve with a dollop of butter and yoghurt and enjoy. 




Serves 4
Time: 35 minutes



1-2 cups leftover rice
1 small onion chopped finely
1-2 green chillies finely chopped
1 tsp dry fenugreek leaves ( methi)
Salt and pepper
1/2 tsp garam masala
1/2 tsp coriander powder
1 tsp carom seeds ( ajwain)
2-2 1/2 cup wheat flour (can adjust less or more )
Enough water to make the dough
Ghee for brushing and frying


Method

First, warm the rice slightly in a microwave or on the gas top for few minutes. Then add the all the ingredients. Using enough water knead the dough so it's pliable.



Pinch about 6 to 8 balls and roll into chapatis about 5 to 6-inch diameters in size and cook on the pan. Cook each side for a minute or minute and a half on low heat then, brush some ghee and fry for few seconds, just as you would do with other parathas. 




Serve the parathas hot with butter and some yoghurt on the side.
